Tom Collins - a delicious summer thirst quencher

The other week my fiance and I decided to go for a Friday after-work-beverage (as you do). Wanting to avoid the hustle and bustle of all the suits crammed into every bar in the city, we headed over the tracks to a hidden little alley way bar called Ezra Pound. Being relatively early (5.30ish), it was still quiet as it geared up for a busy Friday night, which meant we had our choice of the best tables :)
Being that its still summer here in WA and the temp was in the mid 30's I was desperate for an icy cold thirst quenching drink. In walks the Tom Collins in a rather large jar!
Ezra Pound's take on the Tom Collins is delicious, biting yet sweet and perfectly balanced - I even got asked my preference for more tang or sweetness. poured over a large stack of ice and topped with a cherry and slice of lemon it was simple yet delightful! Basically a gin and lemonade punch, it's simplicity is what makes it so great! Definitely worth trying as when mixed probably it's a lot tastier than taking the cheats route and just adding Solo to a shot of gin.
A great way to spend a Friday evening unwinding and cooling down while sipping tasty drinks and playing cards :)
Tom Collins basic modern recipe:
ice cubes
2 oz. dry gin
2 oz. lemon juice
1 teaspoon sugar syrup
soda water
slice of lemon
1 maraschino cherry
2 oz. dry gin
2 oz. lemon juice
1 teaspoon sugar syrup
soda water
slice of lemon
1 maraschino cherry
Place ample ice in large glass.
Add gin, lemon juice and syrup. Top up with soda water and stir well.
Serve with lemon slice, cherry and a straw.
Sit back and enjoy!
